To me, it just has a different flavor and all around better crunch. Plus, I’m less likely to do what I do when I make popcorn in the microwave — which is essentially walk away and let it burn but SOMEHOW there are still a lot of unpopped kernels in the bag.
For one, it gives me the chance to flavor the popcorn anyway I want — maybe with salt and a tablespoon of melted butter, maybe with parmesan cheese and Italian seasoning, or even maybe with Frank’s Red Hot (The Mister really likes this version).
For example, on the Jolly Time website, kettle korn you can buy 12 two-pound bags of unpopped kernels for $20. About 1/4 cup of unpopped kernels makes 6 cups of popcorn. Compare that to the $26 for 48 servings when you buy a case of the 100 calorie boxes.
You want to keep the pan on the heat, but shake it every few seconds. You also want some air to get into the pan, but still keep it mostly covered. I use a lid that has drain holes in the side (which is great for pasta when you don’t want to dirty a colander, but also super for letting air into the popcorn pan). If you don’t have a lid with holes, very carefully hold the lid to the side so the pan is mostly covered but a little air gets through. The kernels will start to pop in about 30 seconds.
